Puffy Pastry With Cornflour - Sahuur

Saf-instant yeast (125g)

INGREDIENTS
Serves for 6
For the dough:
2 tbsp of Saf-instant yeast (11g)
1 and half glass of cornflour (150g)
3 and half glass of wheat (350g)
1 cup of light milk (200 ml)
1/2 cup of warm water (50ml)
3 tbsp of oil (25g)
1 tsp of salt (10g)
1 tbsp of sugar (10g)
1 tbsp of light butter (25g)
1 egg
For filling:
200g light cheese
5-10 leaf of scallion
3 branches of finely chopped parsley
For topping:
1 egg
2 pinch of sesam

Preparing

1)In a bowl, mix all the dough ingredient knead until the dough is homogenous. Cover it with a clean towel and let it rest for 10 minutes.

2)Divide into dough pieces of about 70 g each, cover with a clean towel and let rest for 5 to 10 minutes.

3)In another bowl, add the chopped scallion, light cheese and mix.

4)Using a rolling pin or hand, roll out the dough into a circle shape and pour the cheese filling on top and close the dough.

5)Put onto the oiled tray and cover with damp towel and allow to rise in a room temperature (25°C -28°C) for about 1 and half hour. 

6)Beat the egg and spread onto the dough then add the sesame.

7)Bake the dough in a preheated 180°C oven for 15 minutes.

Puffy Coconut Dessert - Iftar

Preparing

1)In a bowl, mix all filling ingredient.

2)Boil the syrup ingredient in a pot and let it cool aside.

3)In another bowl, mix the dough ingredient except the butter for the dough and knead until the dough is homogenous. Cover with a clean towel and let rest for 10 minutes.

4)Open the dough in a rectangular shape and place the oil in the middle of the dough and close the dough and let rest in a fridge for 15 minutes.

5)Double the dough in a rectangular shape again and let rest in a fridge for 15 minutes again.

6)Open the dough in a long shape on the floor surface. Divide into dough pieces of 5*5 mm with a knife.

7)Pour the filling ingredient on top and roll the dough.

8)Put onto the oiled tray and cover with damp towel and allow to rise in a room temperature for about 40 minutes.  

9)Beat the egg and spread onto the dough and bake the dough in a preheated 180°C-190°C oven for 15 minutes.

10)Pour the cold syrup onto the dough and serve cool.
