Cheese Pastry with Wheat Flour - Sahuur

Saf-instant yeast (125g)

Serve for 6
Ingredients
For the dough:

2 tbsp of Saf-instant yeast (11g)
Whole wheat flour (250g)
2 glass of white flour (250g)
1 glass of water (100ml)
1 glass of light milk (200ml)
1 cup of olive oil (50g)

For the filling:
Light cheese (200g)
3-5 branch green onions
3-5 branches of parsley
3 tbsp of olive oil (30g)

For the sauce:
1 egg
1 glass of yogourt (200g) 
3,5 tbsp of olive oil (30g)

Topping:
Black Sesame 

Preparing
1) In a bowl, mix all the dough ingredient knead until the dough is homogenous.
2) Divide the dough into 4 pieces, roll and let rest for 10 minutes. 
3) Roll each dough pieces of about 30x30 cm with a roller. 
4) Pour 3 tbsp of olive oil onto the 1st dough, then put the 2nd dough piece onto the 1st dough. 
5) Pour olive oil onto the 3rd dough, then put the 4th dough piece onto the 3rd dough. Let the dough rest in a warm place for 10 to 15 minutes.
6) Put the first two doughs together according to the size of the oven top and place it in the greased tray. Add the cheese filling onto the doughs. 
7) Then place the other two doughs on top. 
8) Cover the dough with a damp towel and let the dough rest in a room temperature 25°-28°C for 1 to 1.5 hours.
9) In another bowl, whisk together the yogurht, egg and olive oil and spread the mixture on top of the dough. And sprinkle the black sesame. 
10) Preheat the oven to 190°C -200°C and bake until hot and crusty on top, about 25-30 minutes.

Turkish Pizza - Iftar

Preparing
1) In a bowl, mix all the dough ingredient knead until the dough is homogenous. Cover the dough with damp towel and let rise for 10 minutes. 
2) Divide the dough into 12 pieces and roll with your hand and let rise for 10 minutes.
3) Mix together tomatoe, green pepper, garlic, onion and parsley. Add the minced meat, margarin, paste, salt and pepper into the mixture and pour the water. Then knead the mixture until it is homogenous. 
4) Roll each dough with a press of 0.5 cm.
5) Spread the meat-filling mixture on each dough and place dough onto the tray.
6) Bake the dough in a preheated the oven to 250°C and about 6-8 minutes.
