Vegetable Soup with Dough - Sahuur

Saf-instant yeast (125g)

Serve for 8-10
For the dough:

2 tbsp of Saf-instant yeast (11g)
1 tbsp of Saf-instant yeast (5,5g)
5 glasses of flour (500g)
2 medium size egg
2 tbsp of olive oil (20g)
1 glass of water (150ml)
1 pinch of salt

For the filling:
2 sliced avocados
2 glasses of green lentil (300g)
10 root spinach
2 clove garlic
1 onion
2 tbsp pepper sauce
100g butter
2 tsp of salt (20g)
1 pinch of pepper
1 pinch of dry mint
10 glasses of water (1500 ml)

Prepare the dough:
1)In a bowl, mix the dough ingredient and knead until the dough is homogeneous. Roll the dough and let rest for 10 minutes.
2)Roll the dough into a rectangular shape with the rolling press and divide into dough pieces of 1 cm with a knife.
3)Cut the each 1 cm dough into the horizontal small pieces. Cover the pieces with the flour and put on a tray. Then bake the dough pieces in a preheated 180°C oven for 3 to 5 minutes.
Prepare the filling:
4)In a pan, boil the green lentil and salt.Then filter the water. In another bowl chopped the onion and spinach.
5)In a pan, melt the butter and roast the garlic, onions and spinach. Add pepper sauce and pepper in it.
6)Mix the boiled green lentil into the mixture and pour the water.
7)Add the baked dough to the boiling mixture and cook the doughs are become soft. Serve hot.

Patty with Spinach and Feta Cheese - Iftar

1) In a bowl, mix the dough ingredient and knead until the dough is homogeneous. Divide the dough into 7 equal pieces and roll. Cover with a damp towel and let rest for 20 minutes.
2)Rest the dough on the greased floor. Spray the olive oil on the dough and toll about 25x25 cm with your hand. Rest the dough for 20 minutes.
3)On a greasy surface, press each dough slightly to the both sides with your hands to make a large and thin dough.
4)Spread the spinach mixture over the dough and roll in the form of rolls.
5)Put the dough onto the oiled tray, cover with a clean towel and let the rest the dough for double size for 1 to 1.30 hours in a room temperature. (25°C -28°C)
6)Spread the sauce mixture on the dough.
7)Bake the dough in a preheated 200°C-220°C oven for 30 to 35 minutes.
**Since the baking trays can be in a different size, the dough can be also prepared as 2 trays.

1 cup of olive oil (40g)
1 egg
2 glass of water (450g)
1 tbsp of salt (10g)
100g olive oil for roll the dough

For the filling:
2kg of spinach
2 onion
1 tbsp of salt (20g)
250g feta cheese
1 glass of olive oil (170g)
**Wash the spinach and chop into small pieces.Add the salt and stir together and let rest for 5 minutes.
Then filter the spinach water. Chopped the onions.In a fried pan with olive oil, saute the onions. Whisk the spinach and feta cheese in it.

For the sauce:
300g yoghurt
1 glass of olive oil (170g)
1 egg
**Whisk all the sauce ingredients in a bowl.
