Zesty Lemon and Orange Bread

Saf-instant 11 gr

Ingredents:
1 sachet of Saf-instant 11 gr
4,5 cups of flour / 500 gr 
3 cups + 1 tea glass of semolina / 400 gr 
3 tbsp of sugar / 60 gr 
2,5 tbsp of butter / 50 gr
2 eggs + 1 egg (for eggwash)
3 tea glass of warm milk / 340 gr 
2 limon zest
1 orange zest
1 lemon juice
3  tbsp of oil
A pinch of salt

Instructions:
In a large bowl mix flour, semolina, salt, sugar and yeast. Add eggs, lemon juice and melted butter. Pour the warm milk gradually and mix. Then add the grated lemon and orange pees and knead until the dough is soft and homogenous.

Place the dough on a greased oven tray. Cover with a damp cloth and leave to rest for 30-40 min at the room temperature (25-28°C) until the dough is doubled in volume.

Cover the dough with beaten egg with the help of a brush. Bake for 20-25 minutes in the preheated oven at 210-220 ° C.
